Coconut Milk Tofu Sauce
Serves 4 persons
500 g of Tofu, diced
2 galic cloves, minced
3 tbs of olive oil
100 ml of vegetable stock
200 ml coconut milk
a pinch of salt
Marinate the tofu with:
8 tbs of soy sauce
100 ml coconut milk
1 tbs of curry powder
1. Mix marinade ingredients in a bowl. Then, marinade the tofu for 30 minutes.
2. Heat olive oil in a pan over medium heat. Add the chopped garlic and the tofu (without the rest of marinade) and cook for 5 minutes.
3. Add coconut milk, vegetable stock and the rest of marinade and cook for another 10 minutes with low heat.
4. Serve with steamed rice.
