Gazpacho

SERVES 4

4 ripe tomatoes
3 cups of tomato juice
1 small cucumber
1 small green pepper
2 spring onions
3 garlic cloves
1/4 cup of red wine vinegar
1/4 cup of good olive oil
4 ice cubes
salt, pepper, mint, sugar (according to preference)

1. Put all ingredients in a food processor  and blend them very well. If the mixture is too thick add more ice cubes or cold water.
2. Garnish with fresh cucumber, spring onions, green pepper and bread croutons.
3. If you want it to be more consistent, you can also add some feta cheese as well.

The longer the gazpacho sits, the better it tastes. So, it’s the best and easiest recipe on a hot summer day for work the next day or for a picnic.
