Gluten Free Rice Flour Crust

Serves 4 persons

200 gr of rice flour
150 ml of water
40 gr of butter
3 garlic cloves, pressed
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
½ teaspoon salt
¼ teaspoon freshly ground pepper

1. Put all ingredients in the quiche tart pan and start mixing the ingredients with your fingers. After the mixture becomes homogeneous, start spreading it on the bottom of the tart pan. Make sure it’s evenly spread throughout the entire surface and a centimeter on the edges of the pan.
2. Once it is ready, take a fork and poke the bottom in several places in order to allow air to penetrate the mixture. This method protects the crust from breaking once it bakes.
3. Stick it in the oven for 15 minutes at 200 degrees Celcius. It should be golden, brown.
4. Afterwards, pour in any quiche mixture (HERE and HERE you can find some examples) and stick it in the oven again for another 30 minutes.
