Pizza Muffins

SERVES 4

2 green onions
2 cups flour
½ teaspoon salt
1 tablespoon baking soda
1 cup of grated mozzarella cheese
2 tomatoes, chopped
1 egg, lightly beaten
2 tablespoons of olive oil
50 grams of seedless olives, chopped
4 slices of quality ham/jamon
1 teaspoon of Italian herbs

1. Preheat oven to 200 C.
2. Mix all ingredients in a large bowl.
3. Make egg up to 1 cup with water then mix with the rest of the ingredients.
4. Spoon into the prepared muffin tin and bake for 20-25 minutes or until the muffins are golden. Makes 12 muffins.

Serve with a green salad on the side.
